turning add to cart on and off per product

I have a client that is a manufacturer and under contract they can only sell accessories and replacement parts to consumers online. Is there a way to keep the main products in the store but not allow people to add them to cart? The catch is that they need to be able to add parts and access to cart. I have them setup as cross sells.(I'm assuming that is the best way)
my approach:
enable inventory
set it to 0 on the main products
change the item out of stock site term to nothing
enter a huge number on the inventory for the accessories.
Does anyone know of a better way to accomplish this?
Also for the life of me I can't find a way to turn off the wishlist. I know it is probably in the admin but can't find it in the docs.

I have been told to go into the inventory page for the product and select "Backordered – do not allow purchase" but I do not have that option in the dropdown list. Has anyone else had this issue in bvc5?

Yeah, it don't work on BV5 SP1
[Editor] This has not been reported as a bug yet. If you are able to reproduce an error please let us know and we'll investigate.
