Problems with character codes displaying in emails

Hi,
I wonder if anyone can shed any light on the following. We have BVC 5.4 running on a windows 2003 web server. When we send the order confirmation and delivery status emails etc, the £ signs are showing as ?? or £ in some email clients. Though not in my Outlook 2007 client.
Now from what I understand this is a codepage issue and the handling thereoff. I have tried putting <meta http-equiv="Content-Type" content="text/html;charset=UTF-8" > in the <head> section of the email's html but still get the same problem.
Short of editing all the BVC source to use &pound; instead of the {0:C} string format, is there anything else I can do?
Running out of ideas here! Any help appreciated.

Unfortunately, email clients are well known to not follow web standards for displaying content. It's just a fact of life the HTML email is very difficult to get correct in every client.
What specific clients aren't displaying this properly?

It seems to be more a case of the email is not being handled through the email provider.
If I place an order using my own email address it literally goes directly from the mail server on the website to my email account. If we do the same but to an email that uses Easyspace.com pop3 box the ?? are showing up whether the email is downloaded via POP3 or viewed in their webmail client. I have put in a query to easyspace technical support, but it appears that blueyonder.co.uk (Now virginmedia.com) has the same issue.
I'm sure other people must have come accross the same problem, I'm just wondering how they have solved the issue.

Could you use the specific ASCII codes to solve the problem? IE, enter the "& pound;" or "& #163;" to get the correct symbol across all e-mail programs.

That was my first thought, however the emails are generated using a {0:C} string format which fetches the currency symbol so I would have to edit all the source to replace these lines. We think the issue is with a 3rd party piece of software ignoring the unicode directive and treating it as ASCII regardless but we're still looking into it.
