I found that when editing and order (via the admin) that had a choice/modifier that existed at the time of the order but no longer existed would cause the order to corrupt and become inaccessible.

For example, you are selling t-shirts that had a choice of small, medium and large. The order was placed for a large shirt. A week later you removed the "large" option from the site as you don't want any customers to be able to order that as they are discontinued. If you go in to edit the order that contained the "large" choice/modifier back when it originally was there...you get an error.

What I haven't confirmed is if this only occurs with choice/mods that affect the price versus non price adjsuting choices.

I can confirm that we had a similar problem in 5.7.3 when editing an order. The choice had been removed as Derek described (same reason).
Upon editing the order, it put "Gift Wrap" at the end of the item name in our case (probaby unimportant, but just for documentation, Gift Wrapping is not enabled for this item). It also changed shipping from "Shipped" to "Unshipped" and even though it is marked as Shipped, it show up as Unshipped and Complete. Deleting the package and shipping again did not change the "unshipped" status.
