Has anyone implemented a feature to hide product options until selected? Our site has a ton of options that is getting to look overwhelming. (see attached)

Are you asking purely for display purposes or are you saying that you want the choices to be dependent? If it's the former it might be possible to write some clever jQuery to achieve this.

One challenge that I see with this is when a choice has a default value and the customer does not change the default value. How would the software known to reveal the next option?

There are benefits for us to have the choice availability contingent upon selections. However the visual solution is much more needed for us. I was thinking something like this (attached), where certain options become visible when the text box is clicked on. If text is added, the options remain visible. If no text is added, the options collapse and are hidden. This would save a lot of space and make things much clearer for the users.
Do you think that is doable somehow? Do you have other suggestions?

Yes, I think this could probably be done with some clever jQuery. Alternately you could create a custom Product Input that would contain these group of form elements that correspond to a line of text. If you go the jQuery route you would still end up with each Product Input value being shown in the cart, even if the form field was hidden and no value was entered (like it does now). If you created a custom Product Input this would probably not be the case.

It would be nice to not have all of the non-selected items in the cart, since it can get pretty long. I'll contact you by email to discuss this further. This looks promising. Thanks.

I like the way adidas does their accordion options menu.

I also like the ModernBathroom "view images & info" links next to the options. Right now I have "(?)" links next to my options located there by fixed positioning via individual HTML Area inputs. This doesn't work well, especial with variations in browsers and even with the new BV2013 update. Can both the accordion style option inputs and the corresponding "view images & info" feature be implemented?
