I would recommend that you create 1 item for each scheduled course and limit inventory to the spots available:

Product SURF001 = Week of April 11th - April 17th

Product SURF002 = Week of April 18th - ...

Along the lines of what Marcus said, a product could be a course and then you could assign product choices to the product that represent the available dates. Then, like Marcus said, you could use inventory to limit the number of registrants for each course date.

Hello,
I am having an issue, my website is not calculating shipping costs correctly. The shipping estimate is significantly less for international orders, and it is also coming up short when calculating domestic orders. I realize it is just calculating an estimate for the buyer, but is it possible to have the estimate be more than what they are going to pay for shipping rather than significantly less? Any help would be greatly appreciated.
