I was hoping that one of you could look over my category structure and let me know if I am off to the right start?

I am re-doing my entire category structure from scratch and re-assigning all products, so I am open to any advice!

That looks pretty straightforward to me. One thing that can make a difference is how many products you have in each category. I assume that you will have other top-level brand categories like Audi and other sub-category makes like 5 series, 7 series, etc.

You are correct. It will look like

Here is one more questions though...

Should I have the sub-categories include the model name? Will this help for SEO?

Example:

Should I use this:

BMW
-3 Series
--Interior
---Aluminum Pedals

or...this:

BMW
-BMW 3 Series
--BMW 3 Series Interior
---BMW 3 Series Aluminum Pedals

Yes, this will probably help with SEO. However, from a usability standpoint, it makes the category tree "noisy" and hard to scan. A compromise might be to set the page titles to include the full model name but leave the category names abbreviated. You can also help your cause by adding keyword-rich text links within your site's content. For example, you could put a text link somewhere on your homepage that says "BMW 3-series performance exhaust systems" Disclaimer: I have no idea if this is a good keyword phrase for you; that's why we do keyword research.
