How come when I look at one of my product pages the size of the product image is being limited to 100x100? Under the Options tab in the admin section I have my medium size set to 225x225. The image the page is loading is the correct image, but for some reason it is reducing it to 100x100. All help is appreciated.

I would try bumping your Image Size back to 220 x 200. This is what shows up as a default for the medium size image. Perhaps there isn't enough room for the image on the product page and BV5 may pick up the other one in that case. If you modified your product page template could be you didn't leave enough room for it.
Make sure you haven't put your small image in your medium spot.
