This appears to be fixed in SP3 based on my tests but you might want to check it BV.
Problem:
Product has a modifier that is required
Product has a minimum quantity.
User changes the minimum quantity to something below the minimum and hits add to cart. User is prompted to select the required field. Field is selected, user tries to add to cart the lower than minimum amount, error is thrown. Object not set to instance etc. Drop down list used for modifier.
Does not occur in SP3 B2 best I can tell.

Justin, sadly this isn't fixed in the final SP3. I am not sure if it's a matter of the number of options or not, but I will submit a ticket this weekend. Please follow up and I'll give your team access as needed to work out the bug. I can create the bug on a stock SP3 install. I am going to bet it's a real simple hotfix.
The ticket will include links back to our site, the specific error in the event log and the actions needed to trigger it.
