Is there a way to change which Display Template is the Default when creating a new product?

Nope,
But if you use only one template for all your products (I guess most of us do that anyway) you can add all your product with whatever template is the default and then go into the DB and run:
update bvc_Product
Set TemplateName = 'bv5'
Replace 'bv5' with the name of your prefered template.
All the standard, backup your db stuff, I don't make any warranty for this code and so on still applies ;)
