where do I set up searchable properties and why would I want to? Can somebody explain?

I got an answer finally from BV support to my ticket - the Searchable Properties is supposed to be turned on by creating a Product Property. Problem is we did and the feature doesn't work.
Still waiting for a diagnosis from BV support - will post if we figure it out in the meantime.
