Accepting Credit Card Payment w/o Authorization

We are setting up our site to accept credit cards online, however we do not plan to use an online payment processor. I set the payment gateway to 'manual' and the first order went through, but the credit card number in the order admin view only shows the last 4 digits of the credit card. Can someone explain how we modify the site to retain the entire credit card number. Next, we would like to be able to encrypt the credit card info once we manually place the credit card transaction offline. Is this possible with BV5?

Options > Payment > Credit Card 'Edit' > check 'Display full credit card info....'.
Encrypt, no. You can set so the number is lost at a set time though. |

Deleting the number from the database would be even better. Can you tell me where I find that option?
