When de-selecting the "re-direct to shopping cart after item is added" option in the admin I see that a message is displayed after adding an item to the order stating "this item has been added to your order".

My question is under this scenario is it also supposed to display a "checkout" or other button option to take folks to their shopping cart or are they just supposed to know to click up in the top right where the "order summary" is to proceed. The reason I ask is that I have modified a bunch of stuff over the years and I can't remember if the original functionality has this?

not out of the box, but go to Dashboard > Options > Orders (left nav)

should see a field for "Item added to cart text"

you can add HTML there to point user to the cart page.
